Volunteer Opportunities at PVRPV

PVR PV has a longstanding commitment to giving back into this wonderful community we call home. Several of our employees have participated in several non-profit opportunities for many years and as a company we have chosen to assist those on our midst who need support. We are doing several things that you may want to join us with.

We have identified a large community of mostly women and children who actually live in and support themselves off of the Puerto Vallarta land fill or dump. They actually feed and cloth themselves from the dump. There are organizations that support them with food and clothing. However, we believe that to actually break the cycle of poverty education is a real priority.

So we are doing your bit by working with other local expatriate business and restaurants in PV to bring school supplies to them as well as sponsor several promising students to stay in school. As these folks are desperately poor, they cannot afford the supplies and costs of their education. This is we where you and PVRPV come into action.

On your next visit to Puerto Vallarta please bring an extra suitcase of basic every day school supplies. Talk to your friends, community groups or your faith based organization about the possibility of gathering these for your next trip to Vallarta. This is actually changing lives and families for generations to come; your assistance is sincerely appreciated. Each Monday afternoon we head out to the area with some great food from area restaurants and our school supplies and spend just a few hours encouraging and working with many of the older children about school and its importance for the future. For the low cost of $250 sponsorship per year you can keep a child in school. This will pay for school supplies and uniforms as well as some modest family support. Most quit by the time they are 12-13 years old and go to work. You will personally get to know your sponsored child via pictures and letters. Rotary Club International is a serviced based organization that brings together business people from all over the globe to reach out and serve others in need. Our number one goal is to serve others. As these folks are desperately poor, they cannot afford the supplies and costs of their education. Rotary Club Puerto Vallarta Sur is one of the most active clubs in Mexico.

Our number one goal is to minimize the cost of basic education for promising students and their families so that they can stay in school. At the age of 12 years, kids can legally leave school to go to work. With the family in dire need for a basic roof or some food, there really is no choice in the matter. In most cases we have seen, that the only reason many drop out is because they cannot afford the simple cloths, shoes, school supplies, and transportation even registration fees. With a little motivation, encouragement and cash many of these kids would jump at the opportunity to stay in school and not be a burden to the family with extra school expenses. We currently are sponsoring nearly 40 students each year.

So here is the plan. We have developed a simple yet extremely successful Scholarship Program (Programme de Beccas) in which a child is sponsored for one year, though we encourage our Sponsors to stay with their child through the completion of their education.

Here are the guidelines and rules:

To be accepted the student must have a grade point average of at least 8 (out of 10) or better
Their family's economic situation must be that with out this support the child would need to drop out of school.
Their parents must be completely supportive of the student's education and be actively involved in the parenting process.
Cost To Sponsor a Student for one year:

The cost of keeping an elementary student in school for one year is $250 USD
The cost of keeping a middle school student in school for one year is $300 USD
The cost of keeping a college or vocational student in school is $350 USD
You will be assigned your student and this student will remain your sponsored child until you either need to cancel or until the young person completes their education. We encourage continuing communication between the student and sponsor. If the sponsor ever has an opportunity to visit Puerto Vallarta we would be glad to arrange a time and meeting for your to get to know your sponsored young person and their families. Theses are wonderful people, who with just a little bit of help will make great citizens and will give back, just as you have.

There are several areas, which offer a variety of shopping within a few blocks. They are the following.

Tourist Information for Puerto Vallarta

Electric: 110/120 (same as Canada & USA )
LOCAL CUSTOMS & LAWS:

Tourist Card – when you arrive in Mexico you will require an Immigration document called a “Tourist card”. You don’t need to carry this document with you, but you will need to present when departing the country.
Legal drinking age – is 18 years. It is illegal to drink in public. Drug laws are harsh.
Siesta time – 2-4pm, many businesses close during this time.
Tipping – is similar to Canada & the U.S. 15% - 20% in restaurants & bars.
Restaurants – you may wonder why it takes so long for someone to bring you the bill. In Mexico it is considered rude to bring the bill until you request it. To local culture it infers that the client is being asked to leave. So when you are ready to leave, you should ask for the bill.
MONEY
Exchange rates – usually best in the banks, slightly less in the Money Exchanges (Casas de Cambio) & businesses.
Travelers Cheques – you will need picture ID to exchange
Bank Machines / Automatic Teller Machines – are bilingual & easy to use, you can access money directly from your account or specified credit card. They usually give an exchange rate as good or better then the banks. Normal service charge is $1 - $2 depending on your bank and accessible 24 hrs/day.
Coins – there are 100c (centavos) in one ($1) peso. Since some coins have such a low value you may not get exact change in some stores. They do not accept foreign coins
Bank hours: average is 9am – 5pm Monday to Friday. Saturdays 10am – 2 pm .
WATER
Puerto Vallarta ’s water purification system has been certified safe by International standards since 1992. However we still recommend you use only purified bottled water (Agua Purificada) for drinking and making ice unless there is a purification system in the building you are staying in.

Ice Cubes – in restaurants & bars are made from purified water.

Fruits & Vegetables – any fruits or vegetables not being cooked or peeled should be treated with MICRODYN (a bacteria killing treatment).

Wash the fruit or vegetables
Soak for 20 minutes in a non-metal container in tap water with 1-4 drops of Microdyn for every litre of water
Rinse with purified water.
All staff in villas & restaurants will follow this procedure.

LONG DISTANCE
Please check with the staff of your accommodations for long distance options. Usually the best option is to charge long distance calls to your calling cards.

You can purchase international long distance calling cards in most convenience stores (SIX) and pharmacies (CMQ and Farmacia Guadalajara, both open 24 hours).

You can also make international calls from most Internet cafes such as PVcafe.com, located at Olas Altas and Basilio Badillo, where they charge about $6 pesos per minute to call the US .

TRANSPORTATION
Taxis -Local Taxis do not have meters; instead they have set rates per each zone. Within the downtown area the rate is usually about $2 USD or $20 pesos. All taxis carry official rate sheets, when in doubt ask to see it. Taxi drivers are notorious for not having change; when possible try to be prepared with exact change or small bills.

Bus -The green and blue bus from town to Mismaloya and Boca de Tomatlan (last cove on the bay accessible by car) runs every 10 mins. The bus stop in town originates at the corner of Constitución and Basilio Badillo, cost $4.50 pesos. Boca de Tomatlan is the end of the line, the bus turns around and heads back to Puerto Vallarta . From Boca de Tomatlan you can pay for a water taxi to take you to any of the beaches on the south shore only accessible by boat: Las Animas, Quimixto and Yelapa.

Car Rental – you must be over 21 years of age and have a credit card to rent a car. Rate start at about $50 USD / day.

Airport Taxis – the Airport Taxi’s are a separate system from the local Yellow Taxis and are only allowed to pick up passengers from the airport or Marina which are Federal Zones.

MAIL
The mail service in Mexico tends to be rather slow. It will take aprox 2 weeks for mail to reach the U.S. or Canada . The post office is located downtown on Mina Street just off the Malecon. Hours are 9am – 7 pm Monday – Friday & 9am – 12 noon on Saturdays.

Stamps to the U.S. & Canada are about 45c USD. You can also buy stamps in many of the shops & there are mail boxes conveniently located around town.

EMAIL & INTERNET

There are numerous Internet Cafes in Puerto Vallarta . They are convenient and inexpensive. You can send and receive email messages for about $1 - $2 USD per hour. If you have a laptop and access to a telephone line you can have local service set up, cost is about $23 USD per month. Call PVNET at 223-1127 to confirm details. To program your laptop for this service, you will have to go to their offices on the north side of town in the hotel zone, across the street from the Sheraton Hotel, Taxi drivers know the location.

Gutierrez Rizo: (called "El Rizo" by the locals) Constitution and Aquiles Serdan at the River Cuale. Open 8am – 11pm daily. Wide selection of food and produce in addition to hardware, pharmacy & liquor items. There is also an import section if you are looking for a special product not made in Mexico.

Sam’s Club: you can get a free day pass to shop if you are from out of town, known for their selection of USDA beef. You will need to show ID to prove your out of town address.

The fine art of Bargaining is only for beach & street vendors or in the flea Markets. The recommended system is to start at about 60% of the asking price and go from there. Boutiques & stores frown on bargaining, but will often accept diplomatic requests for discounts (especially for cash purchases).

The Cathedral in the center of town is a Catholic Church “Our Lady of Guadalupe”. Services are:

Monday – Friday: 7:30 am , 12 noon , 7pm & 8pm

Extraordinary Donation

Sea Turtle Months (May-December

Puerto Vallarta has implemented a community-wide preservation program that combines protected nurseries for turtle eggs, plus educational projects. Turtle Liberation ceremonies are held daily during the season at participating hotel beaches. In addition, Vallarta eco-tour operators host nighttime tours to research camps designed to protect the eggs where visitors witness sea turtles laying eggs in their natural habitat and the release of the baby turtles. Puerto Vallarta's coastline is among the most important breeding grounds in the world for numerous endangered species of sea turtles. The Puerto Vallarta Sea Turtle Protection Project is a joint effort of the Puerto Vallarta Hotel.

Roger Dubois has joined us from Montreal, Quebec, Canada. He is the challenge-driven concierge who will try to answer all of your questions regarding the properties we offer. In addition, Roger arranges tours and can give advice about the best excursions in P.V. and area.

Also joining the PVRPV team is Cherisse Klassen. Cherisse hails from Winnipeg, Manitoba, Canada and has now made her home in Vallarta. She is our new customer service agent and will answer all your calls and questions with a smile.

Mango Shrimp Recipe from Mexico

"Hey Abuelita, What's cooking?" Recipe of the Month
Mango Shrimp
For each serving, you will need:
2 tsp Couscous 2 tsp Paprika2 tsp Black Pepper 2 tsp Salt 2 tsp Cumin 3 1/2 oz Mango Chutney*2 tsp Wasabe 5 Large Shrimp Bamboo Skewers
Thread raw shrimp on the skewers. In a bowl, mix together: paprika, wasabe, cumin, salt and pepper. Brush mixture over shrimp and grill. Serve with Mango Chutney and Mango Sauce
* Mango Chutney
1/2 tsp Butter 1 tsp Chile Guajillo 1 tsp Raisins 3 Cloves 2/3 cup Cubed Mango 1/2 oz Tamarind Concentrate
1. In a double boiler, over low heat melt together the butter and Chile guajillo 2. Add the mango, raisins and cloves to the butter mixture and let simmer for 5 minutes 3. Add Tamarind Concentrate, bring to a boil stirring frequently until reduced to half 4. Refrigerate
* Mango Sauce
1 lb Fresh Mango 2 oz White Wine 1/2 cup Melon Liqueur 1/2 tsp Curry1 1/2 tbsp Sugar
1. Cube fresh Mango 2. Combine butter, white wine and melon liqueur in a medium saucepan and simmer over low heat until butter is melted 3. Saute mango in butter mixture 4. Mix in the Curry, sugar and mint. Boil for 15 minutes until liquified 5. Refrigerate

Semana Santa, Holy Week, celebrates the last days of Christ's life, the Crucifixion and Resurrection, as well as the end of Lent. Semana Santa is observed with a range of celebrations, from the most solemnly religious, to a mix of pagan/Catholic, to commercial. This is a happening place those two weeks. The city is full with people from every part of the world. The beaches are full of folks just thawing out ready for spring to roll in. Huge Success for our friends, the children at the PV Landfill

We have been overwhelmed at the great success our work at the PV Landfill. Many guests, homeowners and friends have poured out their hearts and wallets to help us support these great kids and their mothers.
As you know we go out each Monday afternoon. We gather food from over five area restaurants and head out to the site. We spend a few hours sharing a meal and "hanging out" with the kids.
We may start a futbol game (soccer), often ending up acting like monkey bars with kids hanging to all limbs. In December Santa came out just before Christmas and the kids had a heyday. Several business owners in the Olas Altas community came together to raise $500 USD for our kids this Chirstmas. We went out and bought about 600 pieces of toys, kids and baby cloths, teen boy and girl type stuff, hygiene and hair care products. We then had enough cash left over to sponsor a child next year and the Olas Altas Business Community is committed to the next four years of continuing this child's education. Santa walked away with two lolly pop stuck to his suite and a very happy smile. That makes two total sponsorships in two months. The awards will be given in February.
We have one homeowner who has even donated 1000 back packs to our project. That is enough for two full years. It is so many we need to have the US Navy bring in the material. Amazing! How awesome it is to know the kind of folks we work with. More importantly the good that is actually changing lives here. It is satisfying to be so involved in this important charitable work.

While on the beach on Sunday, members of our staff and many guests were pleasantly surprised by a pod of Humpback Whales frolicking in the Bay. An awesome site as these huge magnificent animals performed for nearly an hour, entertaining the entire Los Muertos Beach all the way to the marina. The entire beach was mesmerized at the sight of the whales and their babies.
Singled out by its short, wide body and long, curved flippers which are often one third of the total body length, this slow easy-moving animal is usually easily approached. However, the laws of Mexico forbid approaching or disturbing the animals in the Bay of Banderas. The normal length of the Pacific adult males is about 12.5 m and of females 14.6 m. The average weight can be nearly 30 tons.
The humpback is often seen throwing itself out of the water in stunning somersaults and crashing back into the sea again. It rolls on the surface, or sometimes jumps clear out of the water, flippers beating the air as if it were attempting to take off and fly. In the mating season, they sometimes use their flippers to pat each other. 'Nuff said about that! Humpbacks are hunted by humans and killer whales. These whales have been hunted to near extinction, and estimates from 2,500-10,000 exist today. During breeding season the Humpback males are known for singing the longest and most complex songs in the animal kingdom.
Humpbacks are highly inquisitive and will approach quite closely, showing little fear of boats.
Whale watching is fast becoming one of the primary reasons so many guests are pouring into Vallarta each winter. Come enjoy the many eco-wonders of our enchanted bay and see for yourself why Puerto Vallarta is indeed the crown jewel for the Mexican Riviera.

How It Began, Way Back? Paradise Kingdom

Recorded history about Puerto Vallarta starts around 621 BC, when it was part of a large kingdom called Xalisco, ruled by a King called Nayarita. Obviously it was known as one of the most beautiful spots in the entire kingdom. As time moved on, tribes including the Toltecas and the Aztecas migrated to the area and opened up a trail to the Nahuatl Empire located in the valley of Mexico that today is known as Mexico City. During the early 1500?s an explorer from Spain, Francisco Cortes officially stumbled the bay surrounding Puerto Vallarta, but the settlement remained relatively unknown to the outside world for hundreds of years.
The luster of the Bay of Banderas finally reached international global attention in 1963 when John Huston directed the infamous film called "The Night of the Iguana" which began the creation of the mystique as well as mass attention to this area. Soon afterwards Elizabeth Taylor and Richard Burton purchased adjoining homes in the Gringo Gulch area of Vallarta, forever changing the reality of this small village. Now Puerto Vallarta boasts more than 250,000 citizens yet has retained the charms of a small village..

Merchants all over Vallarta indicate they are assessing about a 25% increase in visitors to our little bayside village. It has been amazing to see so many folks coming to enjoy the area and all that it has to offer. Of course with this success the increase in tourist have also have also brought some extra fun particularly with traffic which is always fun in Vallarta. The beaches are just buzzing and full of beach bodies soaking up all the sun. The restaurants and clubs are just hopping. Several brand new eatiers are making a huge success and getting awesome reviews. On the whole all is well in paradise! Mostly the increase is due because of the damage in Cancun. Never before has Vallarta seen such a rise in visitors. Fun is being had by all!

The Mexican Christmas Tamale
For almost all Mexican families a Christmas season without tamales is just not complete. This delicious typical dish--prepared almost exclusively in December to eat during the year-end parties and celebrations--comes from a tradition spanning more than 1000 plus years.
The base of tamale is corn, or maize, a crop cultivated by the Meso-american Indians since pre-Columbian times. Corn has always been an essential element in their diet and it is used to prepare an endless number of tasty dishes, such as the well-known tortillas and atole, plus, even, alcoholic drinks like chicha.
It is also believed that tamales are a part of our ancestors' heritage. The truth is, all Mexicans will remember having eaten them since they were small children. A firm tradition rooted deep in each family.
Making and cooking tamales is generally an activity which involves the participation of all family members. It is a slow, careful and laborious process. As some family members prepare the corn dough, others will be chopping and mincing additional ingredients and yet others will be preparing the plantain leaves and strings that will be used to wrap the tamales for boiling. Grandmothers and mothers will teach granddaughters and daughters how to make tamales; making sure the tradition is kept alive. Even the men get in to the act nowadays!
All through the month of December no Mexican home will be found without tamales. It might seem as if they don't get tired of eating them; some, even three or four times a day! They are eaten for breakfast, lunch and dinner and they are absolutely fundamental for coffee break time.
During the season, invitations to eat tamales at friends' and relatives' homes are common. Whoever does not make them can buy them ready to eat from commercial producers. The fact is, for Christmas, tamales cannot be missing from the kitchen!
Ingredients:
2 pounds maize (corn flour) 2 pounds pork2 pounds bacon 2 cups cooked, seasoned rice Ground chicharron (cracklings; fried pork skin) Several carrots A few potatoes Sweet peppers Coriander Canned peas Salt, black pepper, cumin
Soak the corn dough flour in water and cook it with a little salt one day before making the tamales. Wash it thoroughly and change the water. Let it stand overnight. The next day, knead it into dough.
Boil or sautee the carrots, potatoes, onion, perhaps a little Serrano pepper and meat in separate pots, seasoning with black pepper, cumin, coriander and salt.
Once this is done add the water from the meat you just cooked to the dough until you get an intermediate thick consistency. Also add some salt and the potatoes, previously mashed or pureed in a blender.
Wash the plantain leaves (you can substitute banana leaves). Cut them into 16 by 14 inch pieces. On each piece place two tablespoonfuls of dough. On top of the dough place a tablespoonful of rice, a piece of meat, some chicharron, a slice or two of carrots, some peas, coriander and a strip of sweet pepper. Fold the leaf into a rectangular shape, making sure no part of the tamal is exposed. Tie the bundle carefully and securely with string.
The rest is easy. Just place them in salted, boiling water for about one hour. Unwrap them so you can get to one of the most typical and delightful tastes of Mexico.
Note: Many variations exist on this basic recipe. Different kinds of meat can be substituted (shredded chicken breast and roast beef are two favorites), breakfast items and the flavor of the corn dough can be enhanced greatly by adding a few minced onions, some crushed garlic and maybe even a little Tabasco sauce. In Mexico the basic "seasoned rice" is rice cooked with minced onion, diced sweet pepper, garlic, coriander and salt.

Have you ever been curious about the names of the streets in Old Town Puerto Vallarta?
After a bit of research one discovers the explanations of the various street names in the Zona Romantica of Puerto Vallarta. Many are named after governors of Jalisco; figures, some from the period of the 1910 revolution and the early days of the PRI/PRD party, or trees.

Amapas - The amapa is a tree with bright yellow flowers, the flower is the basis of a number of common embroidery patterns along the coast. If you Google amapa árbol you can find pictures, etc.

Pilitas – A pila is a baptismal font, and pilitas are the small holy water stoups at the entrances of catholic churches (pilitas de agua bendita).

Púlpito - Means "pulpit" in spanish. (Pulpito without the accent means little octopus).

Manuel Diéguez - Governor of Jalisco at about the time of the revolution and an ally of V. Carranza. There is more about V. Carranza below.

Olas Altas - You probably know this means "big waves" already. (Tall waves literally, but we don’t say that in English.)

Basilio Badillo - Governor of Jalisco for a time, but more importantly an intellectual and publicist for Obregón (Mexico’s president in the 20’s and responsible for stabilizing the country after the revolution). Badillo was part of the intellectual clique that set up the PRD party that would later become the PRI, Mexico’s dominant ruling party until Fox’s election in 2000.

Pino Suarez - Was F. Madero's vice president and was executed with Madero during a coup in 1913. There is more about Madero below.

Ignacio Vallarta - The Jalisco governor for whom the city itself is named. He also served on the Supreme court an in a number of roles in the foreign office during the Porfiriato (late 19th century dictatorship that lasted nearly 40 years until the revolution ended it).

Venustiano Carranza - One of Mexico's early post revolutionary presidents and an ally of Madero in the revolution. Madero was overthrown by a coup in 1913, and Carranza was the political leader of the resistance. He became president in 1915 and then was re-elected under the new constitution of 1917.

Insurgentes - The name applied to those who fought for independence from Spain.

Lázaro Cardenas - One of Mexico's most important presidents. He nationalized the oil industry in the 30's and carried out a great deal of land reform. He is also responsible for cementing the dominance of the PRI party.

Francisco Madero - Leader of the campaign to oust the dictator Porfirio Diaz. Madero called for the revolution in 1910, and he succeeded Diaz as president. As president he was slow to implement reforms and he was toppled and killed during a 1913 coup known as the /Decena Tragica /(tragic ten days) because of the large death toll in Mexico City over the ten days of the coup.

Aquiles Serdán - Supporter of Madero, killed with his family in the first days of the 1910 revolt. He is recognized as the first martyr of the revolution.

5 de Febrero - Anniversary date of the ratification of the 1917 constitution.

And then the uninspired trio of names for uninspired cross streets: Aguacate - avocado,
Jacarandas - a tree or shrub with violet flowers, and Naranjo - the orange tree.
It is suspected that prior to the 1950s most of the north-south streets were named for trees while most of the east-west streets were named for church related things. As the town was developed in the 50’s after the first road was put through into the town, the streets were renamed after local greats related to the revolution and the ruling party.

IFC Home Tours: Hotel Posada Rio Cuale Aquiles Serdan #246

The now famous Home Tours, the principal money-making project of the IFC (International Friendship Club), are offered twice weekly from November to April. These tours take tourists into homes of the "rich and famous", as well as into typical vacation and year-round homes of the "locals". Tourists gather at the Hotel Posada Rio Cuale on Wednesday and Thursday at 10:30 a.m. to board air conditioned buses, hosted by knowledgeable and genial club members, for 2 hours of delight that Include complete tours of four homes, many shown by the owners themselves. The drive up into Gringo Gulch or Conchas Chinas is an adventure in itself. Vistas of breathtaking beauty, coupled with hairpin curves will electrify each tour group.
The Club was started in 1987 by a small group of ex-patriots, Americans and Canadians, who according to the by-laws, wanted to organize the international community here in Vallarta a place to "provide services, collect and distribute funds in response to the humanitarian and educational needs of the community we have come to love" and to promote friendship among the international community and people of Vallarta.

PVRPV has a longstanding commitment to giving back into this wonderful community we call home. Several of our employees have participated in several non-profit opportunities for many years and as a company we have chosen to assist those in our midst who need support. We are doing several things that you may want to join us with.
We have identified a large community of mostly women and children who actually live in and support themselves off of the Puerto Vallarta land fill or dump. They actually feed and cloth themselves from the dump. There are organizations that support them with food and clothing. However, we believe that to actually break the cycle of poverty education is a real priority.
So we are doing our bit by working with other local expatriate business and restaurants in PV to bring school supplies to them as well as sponsor several promising students to stay in school. As these folks are desperately poor, they cannot afford the supplies and costs of their education. This is we where you and PVRPV come into action.
On your next visit to Puerto Vallarta please bring an extra suitcase of basic every day school supplies. Talk to your friends, community groups or your faith based organization about the possibility of gathering these for your next trip to Vallarta. This is changing lives and families for generations; your assistance is sincerely appreciated. Each Monday afternoon we head out to the area with some great food from area restaurants and our school supplies and spend just a few hours encouraging and working with many of the older children about school and its importance for the future. Christmas is in full swing right now in Vallarta. These Posadas are an enactment of looking for lodging of St. Joseph and Virgin Mary, called The Pilgrims going to Bethlehem for the Census according to the Christian Scriptures. In Spanish we called them: "Los Peregrinos, San José y la Virgen María". Each family in a neighborhood, will schedule a night for the Posada to be held at their home, starting on the 16th of December and finishing on the 24th on Noche Buena.
Every home will have a Nativity scene. The hosts of the home are the innkeepers, and the neighborhood children and adults are Los Peregrinos, who have to request lodging through singing a simple chant. All carry small lit candles in their hands and four teenagers of about the same height are chosen to carry Los Peregrinos, which are two small statues of St. Joseph leading a donkey, which Virgin Mary is riding sidesaddle. The head of the procession will have a candle inside of a paper lamp shade that looks like an accordion but open at the top and it is called a "Farolito" or little lantern.
The Peregrinos will ask for lodging in three different houses but only the third one will allow them in. That will be the house that is supposed to have the Posada for that evening. Once the innkeepers let them in, the group of guests comes into the home and kneels around the Nativity scene to pray the Rosary.
On Noche Buena, December 24, everybody goes to Misa de Noche Buena which is at midnight. After the Mass, everyone goes to their respective homes to have dinner with family and any friend who does not have a family is always welcome to be part of a family celebration, and most important of all to place the Baby Jesus in the manger in the Nativity scene.
The presents are not received on Christmas, for Christmas is held in honor of the celebration of Life of Our Savior.
The children's celebration of receiving presents is not until January 6th, "el día de Reyes", the day of the Kings, or the Wise Men Day. It is the Magi who brought the presents to the Baby Jesus, thus, they bring the toys to the boys and girls who have been good. The children place their shoes by the window, so the Magi place the present in the shoe. If the present is bigger than the shoe, it will be placed next to it. Happy Holidays to all!

"Hey Abuelita, What's cooking?" Recipe of the Month
Shrimp Cajun Skillet
This is one of my favorite shrimp dishes from a restaurant in San Francisco's Haight Ashbury neighborhood called Cha Cha Cha. It is by far their most popular dish. Cajun food is very similar in complexity to Mexican food so the trip across the Gulf fits our palate nicely. All one needs is a nice loaf of bread for dipping in this scrumptious sauce and a salad for a complete dinner. Buen Provecho!
Ingredients:
SKILLET CAJUN SHRIMP
1/2 cup Cajun Spice Mix (recipe to follow) 1 1/2 cups (12 0z) dark beer (I use Negro Modelo here) 2 cups Heavy Cream 1 Pound medium shrimp, peeled and deveined1/2 teaspoon red pepper flakes
In a large heavy saucepan combine the Cajun spice mix and beer. Cook over medium heat, stirring constantly with a wire whisk to make a thick paste. Do not allow the mixture to burn.
Gradually stir in the cream to make a smooth sauce. Cook over medium heat. Stirring occasionally, for 8 10 minutes, or until the sauce thickens slightly and turns a rich rust color.
Add the shrimp and the red pepper flakes. Reduce the heat and cook the shrimp over low heat for 2 3 minutes, or until the shrimp are pink and opaque. Taste and adjust the seasoning.
CAJUN SPICE MIX
1/2 cup sweet paprika2 1/2 tablespoons cayenne pepper2 1/2 tablespoons garlic powder2 1/2 tablespoons onion powder1 1/2 tablespoons ground black pepper1 1/2 tablespoons ground white pepper1 tablespoon dried thyme1 tablespoon dried oregano1 Tablespoon salt

Volunteer Christmas Opportunities at PVRPV and the Olas Altas Neighborhood
PVRPV, several seasonal snowbird travelers for the season and several Olas Altas area businesses will be sponsoring a family or maybe two this Christmas. We want to ensure that as many as possible enjoy a full joyous, sumptuous Christmas season. Every child should have a present or two beneath the tree this year. Every family should enjoy the warm fellowship of kin and the delight of a wonderful meal to share it with. If you would be so inclined, feel free to call any PVRPV Staff member for additional information.
PVRPV has a longstanding commitment to giving back into this wonderful community we call home. Several of our employees have participated in several non-profit opportunities for many years and as a company we have chosen to assist those on our midst who need support. We are doing several things that you may want to join us with.
We have identified a large community of mostly women and children who actually live in and support themselves off of the Puerto Vallarta land fill or dump. They actually feed and cloth themselves from the dump. There are organizations that support them with food and clothing. However, we believe that to actually break the cycle of poverty education is a real priority.
So we are doing your bit by working with other local expatriate business and restaurants in PV to bring school supplies to them as well as sponsor several promising students to stay in school. As these folks are desperately poor, they cannot afford the supplies and costs of their education. This is we where you and PVRPV come into action.
On your next visit to Puerto Vallarta please bring an extra suitcase of basic every day school supplies. Talk to your friends, community groups or your faith based organization about the possibility of gathering these for your next trip to Vallarta. This is changing lives and families for generations; your assistance is sincerely appreciated. Each Monday afternoon we head out to the area with some great food from area restaurants and our school supplies and spend just a few hours encouraging and working with many of the older children about school and its importance for the future.
For the low cost of $250 sponsorship per year you can keep a child in school. Most quit by the time they are 12-13 years old and go to work. Christmas in Puerto Vallarta

The first thing to know about celebrating Christmas in Mexico is that most everybody takes off the last two weeks in December - to party, spend more time with the family, visit with old friends, even make new friends. One of the biggest fiestas of the year - in small towns, big cities, the beach resorts, everywhere - Christmas in Mexico is celebrated in a variety of ways.
Several weeks before Christmas, elaborately decorated market stalls or puestos are set up in the plazas of every town and city. Some people travel for days from remote areas to get to these markets. The puestos offer crafts of every conceivable kind, foods such as cheese, bananas, nuts, and cookies, and flowers such as orchids and poinsettias.
The poinsettia plant is native to Mexico and is believed to have first been used in connection with Christmas in the 17th century when Mexican Franciscans included the flowers in their Christmas celebration. There is a legend connected with the flower. A little boy named Pablo was walking to the church in his village to visit the Nativity scene, when he realized he had nothing to offer the Christ Child. He saw some green branches growing along the roadside and gathered them up. Other children scoffed, but when he laid them by the manger, a brilliant red star-shaped flower appeared on each branch.
The main Christmas celebration in Mexico is called Las Posadas, which refers to processions reenacting Joseph and Mary's search for a place to stay in Bethlehem. The processions begin nine days before Christmas because the original journey from Nazareth to Bethlehem took nine days. Friends and family members divide themselves into two groups - pilgrims and innkeepers. The pilgrims travel from house to house asking for a shelter and are refused at each until they finally reach the house where an alter and Nativity scene have been set up. Here the pilgrims are admitted with great rejoicing, a traditional prayer is spoken, and the party begins. Food and drink are served and then children take turns trying to break open the piñata.

Wonderful cool dry air has been moving in to Vallarta slowly and lovingly after such a treacherously wet, oppressively hot summer. No more rain deluges and storms raging. Change is blowing in on cool breezes, folks!
Just in time too. We are seeing the sudden awakening of the city. Shops are getting open and slapping on a fresh coat of paint. Everyone is spring cleaning this fall in anticipation of the arrival of High Season here in Puerto Vallarta. Every one is bustling about getting into high gear. We are in the midst of this season?s start of a grand season. The first fundraisers are on, parties planned, villas reserved and the city is poised to enjoy great success.

Chipotle Vallarta Crab Cakes
What I love about these crab cakes is that the mixture itself does not have breadcrumbs in it and that they are baked instead of being fried. This gives them that chock full of crab quality without the added grease.
Ingredients:
1 1/2 pounds of crabmeat cleaned of all shell and cartilage 1-2 cups of bread crumbs, seasoned bread crumbs if for coating 1/4 cup chopped fresh cilantro 1/4 cup chopped fresh chives 1 red, yellow, or orange bell pepper seeded, ribbed and finely diced 1/4 cup spicy brown mustard 1/4 cup mayonnaise 1 large egg, beaten to blend 2 teaspoons seasoning, such as Old Bay, Cajun spice mix, S/P and cayenne pepper
Combine crabmeat and all ingredients except for breadcrumbs. Form crab cakes to desired size, I like to use ring molds and fill one packing it in firmly. Gently press out of mold and coat with the breadcrumbs, and place on a Pam sprayed baking sheet. Cover and chill for at least 2 hours. Preheat oven to 375 F degrees, bake chilled crab cakes for about 15 - 20 minutes until golden. I have placed them directly in the oven after forming. And I freeze them after baking so I can reheat at an event. It is important to not make the mixture too wet or they will not hold their form. I like to serve them with a Chipotle Mayonnaise, caper sauce or remoulade.

October 12: Day of the Race (Día de la Raza)- The arrival of Christopher Columbus marks the joining of the Spanish and Native peoples bloods and the creation of the Mexican "race".
November 1-2: The Day of the Dead (Día De Los Muertos) are celebrated in special ceremonies nationwide. Basically, it is all about having a party in the cemetery. The celebration of the Day of the Dead started in Europe in the ninth century as was brought here by the Spaniards. Actually, it blended very well with the existing Aztec understanding of death and the spirit world. As we have learned, the result is the singular Mexican delicacy of Mole Sauce.
A week or so prior to the start of the Days of the Dead celebrations, vendors set up hundreds of stalls everywhere and begin selling a mirage of items like skeletons arranged and dressed to resemble all types of people and personalities. In addition, there is sugar skulls, coffins, tombs and what ever else the can make into grisly reminders of death. Each home will have an alter as an honor to their departed family and friends. Breads, candies and cookies are baked and offered at the alter. November 1 the souls of the departed children descend to enjoy their treats, and then November 2 nd it is the adults turn to enjoy.
When you visit a home during the Days of the Dead, as a guest you must bring a small gift for the family alters: small candle, miniatures, liquor, food and flowers (especially Marigolds). None of these offerings will be eaten until the all of the deceased loved ones have had their chance to partake.

September was an awesome month here. The whole country explodes with Green, Red and White. September 15 is one of the largest holidays as Mexico celebrates it Independence from Spain . Every home, in every pueblo and city is decorated with all the colors of the Mexican national flag.
September belongs to Mexico . "Viva Mexico!" was the cry heard from coast to coast in every town, city and in every home, large or small. The Mexican nation celebrates their "Independencia" from Spanish rule with real gusto and genuine enthusiasm. There are three full days of parades, patriotic speeches, pageants, charreadas (rodeo like events) and more parties than is thought possible everywhere you look.
The celebration begins with the Day of the Charros. The charro or gentleman cowboy, has come to represent the ideal Mexican man. The charro is perfectly dressed in tight black charro swit with embroidered jacket, trimmed in silver. The charro is a brave patriot mounted on a proud stallion. Women charras also are dressed as impeccably as their male counterparts, displaying the unique costume fashioned after the men, though in long skirts, shawls and fine slippers. This is impressive as it is reminiscent to the Mexican vaqueros, this countries original cowboy.
The excitement concludes at 11:00pm on the last day with an emotional re-enactment of the "El Grito", "Viva Mexico!", which is the famous call for independence and revolution from the Father of Mexico, a priest named Father Miguel Hidalgo in 1810.
Father Hidalgo called for the end of slavery, insane taxation, and aggression and for that cry for freedom he was martyred a year later. The Spaniards beheaded him and three other compatriot leaders and then put their heads in baskets which hung in the town square of Guanajuato for ten years. To this day, the baskets remain as a reminder of the faithful sacrifices for ultimate freedom of this proud nation. One of his followers, Father José María Morelos y Pavón continued the work and independence was finally won in 1821.

PVRPV has a longstanding commitment to giving back into this wonderful community we call home. Several of our employees have participated in several non-profit opportunities for many years and as a company we have chosen to assist those on our midst who need support. We are doing several things that you may want to join us with.
We have identified a large community of mostly women and children who actually live in and support themselves off of the Puerto Vallarta land fill or dump. They actually feed and cloth themselves from the dump. There are organizations that support them with food and clothing. However, we believe that to actually break the cycle of poverty education is a real priority.
So we are doing your bit by working with other local expatriate business and restaurants in PV to bring school supplies to them as well as sponsor several promising students to stay in school. As these folks are desperately poor, they cannot afford the supplies and costs of their education. This is we where you and PVRPV come into action.
On your next visit to Puerto Vallarta please bring an extra suitcase of basic every day school supplies. Talk to your friends, community groups or your faith based organization about the possibility of gathering these for your next trip to Vallarta. This is changing lives and families for generations; your assistance is sincerely appreciated. Each Monday afternoon we head out to the area with some great food from area restaurants and our school supplies and spend just a few hours encouraging and working with many of the older children about school and its importance for the future.
For the low cost of $250 sponsorship per year you can keep a child in school. Most quit by the time they are 12-13 years old and go to work. Here is an awesome recipe that is enjoyed for breakfast, lunch and dinner! "Provecho!"
Chicken Enchiladas Suizas
Ingredients:
1 20 ounce can whole tomatoes 1 7 ounce can diced green chiles 1 medium onion, quartered 2 - 3 cloves garlic, peeled 1 cup sour cream salt and pepper to taste 12 corn tortillas 1/2 cup corn or canola oil 2 pounds boneless chicken breasts, cooked and cubed 4 cups Swiss, Chihuahua or Jack cheese, grated 1 bunch green onions, chopped 1 cup sour cream
In food processor, blend together tomatoes, chilies, onion, garlic and sour cream. Season to taste with salt and pepper and pour into a large saucepan. Heat thoroughly.
Heat oil in skillet until a drop of water sizzles when placed in it. Fry a tortilla lightly on both sides so it's still pliable. Using tongs, remove it from the pan. Dip it into the enchilada sauce and lay it inside a 9 x 14 pan. Stuff enchilada with chicken, cheese and onions. Roll and place seam side down in the pan. Repeat for all 12 tortillas, reserving a small amount of cheese and onions.
When all enchiladas are made, place the pan in a 350 degree oven for about twenty minutes. Remove from oven, pour remaining enchilada sauce over enchiladas until almost covered. Cover with remaining cheese and onions. Broil for two minutes or until cheese is melted. Serve immediately, topped with dollops of sour cream.

One of the issues we see often with our Guests, especially with "first timers" is learning how the money works in Mexico. Fairly simple, but a bit of explaining would be helpful.
Many folks use the easy rule of 10:1 ratio.

$5 (cinco) pesos = .50 cents
$10 (diez) pesos = $1 USD
$20 (vente) pesos = $2 USD
$50 (cinquenta) pesos = $5 USD
$100 (cien) pesos = $10 USD
$200 (doscientos) pesos = $20 USD
$500 (quinientos) pesos = $50 USD
$1000 (mil) pesos = $100 USD

It is advisable to use your ATM card when in Mexico. It is not a good idea to bring a load of US cash to Mexico, then exchange it here. The exchange windows, called Casa de Cambio, can conveniently change your dollars or travelers checks into pesos. The ATMs are everywhere and easy to use and will give you the very best exchange rate for each day. You may take a maximum of $300 USD daily. Remember with the exception of the grocery store and restaurants, most prices are expected to be negotiated. You can pay the taxi or private driver in US dollars if need be. So haggle, haggle and then haggle some more.

"First Timer" or "VIP Airport Pick Up" Services

We are offering a new service at PVRPV. We have had so many requests for airport pick up service, especially for first timers to Puerto Vallarta and Mexico. We thought we would share what we are doing. Just let us know if this would be something you would enjoy.
Once you deplane you will go first to Customs and provide your documents (passport & the Tourist Visa you will be provided either on the plane or there at customs), then you proceed to baggage claim, collect your luggage and then you will head towards the exit. At the next and final station you will be told to push a button that will randomly light up green or red. If it is green you may proceed to meet our driver immediately. If it is red a customs officer will guide you to a table for a quick baggage inspection. This is a completely random process and relatively quick.
Once you clear this last step simply proceed toward the exit and look for your name on a sign with PVRPV Premier Vacation Rentals label on it with your name. The driver speaks English and will be very helpful and friendly. He will assist you to the car (please avoid the time share sales people, as they can be rather pro-active) load you up and off you go in a very nice large Suburban with air conditioning. Our driver will offer you several refreshments like a cool moist scented face cloth immediately after your long journey, as well as our own PVRPV brand of ice cold bottled water, soft drink or an even colder Mexican beer while you are whisked to your vacation home. He will explain where you are traveling on the way and point out key features. If you need to stop at the grocery store, pharmacy or anything, simply ask and he will be glad to accommodate your needs. Call us for prices and you may simply pay the driver directly. Gratuity is always welcome.
Once you arrive at the home we will personally be there, to greet you and introduce the features and amenities of the home to you and your guests. You will receive a very nice gift basket with loads of goodies. Also, if you need us to "stock" (food, drinks etc) the kitchen or refrigerator prior to your visit we will be glad to offer this concierge service in advance of your arrival. Simply, drop us an email.
We will, of course check in with you a few times during your visit to make sure all is well and then meet you when you depart for the airport.

The rains are starting and they are stupendously incredible. Just seeing them up close and personal is thrilling and an adventure on their own. We are seeing powerful images as these daily deluges sweep down from the jungle. These storms dance and play across the Bay of Banderas. The streets becomes gully washes as all the water races to the ocean. It is really wonderful fun actually.

As this e-newsletter reaches you, we are in the throes of wonderful, hot and steamy, summer weather here in Puerto Vallarta. Days are sunny and bright making a day at the beach a truly calming experience and evenings are a little cooler after a summer shower and perfect for al fresco dining. At about nine each night the sky lights up with fireworks in several locations through out the Bay of Banderas and Puerto Vallarta.
May 31st marked the 35th Anniversary of Puerto Vallarta becoming an official city. The name Puerto Vallarta comes from Puerto meaning Port and Vallarta named after the famous Ignacio L. Vallarta, a former governor of the state of Jalisco. The occasion was celebrated with numerous parties culminating with a free concert at the Malecon. 35,000 people enjoyed the smooth sounds of the featured performer, Alejandro Fernandez, Mexico?s premier singing sensation. A huge fireworks display emblazoned the bay at the end of a truly wonderful evening. There are various celebrations year round, capped off by our spectacular Christmas celebrations, beginning on December 11.
